I have been off my blog for a veryyyyyy long time! Not because I stopped cooking but because i was spending more time on my Fashion and beauty Blog - Tangerine Tantrums plus things are moving at a super rapid pace in office. Nonetheless, i am back with an extremely quick and easy receipe for Sunday Breakfast. It is quite light so avoid it as a brunch..
- Ingredients
- Gram Flour (Besan) - 1 Cup
- Curd - 1 Cup
- Asafoetida - 1 Pinch
- Salt to taste
- Turmeric - 1/4 teaspoon
For Garnishing
- Desi Ghee - 2 tablespoon
- Curry leaves
- White Til
- Green Chillies - 2
- Grated Dry Coconut

It is extremely tedious to make it on gas stove so i searched for an easier Microwave recipe. here we go
- In a mixer, blend together 1 cup besan, curd and 2 cups water
- Add salt, turmeric, asafoetida
- Put it in a microwave safe dish and cook on full heat for 2 minutes
- Take it out, mix really well to make a smooth paste
- Put in Microwave for 2 minutes
- Repeat steps 4 and 5 once more
- Finally, take the bowl out, repeat step 4 and microve for 1 more minute - making it a total of 7 minutes
- Take back of a tray or plate - preferably steel - and with a spatula spread it all over. Ensure the layer is smooth and thin

10. once it Dries - you can check by pulling the corner of the dough on the tray with a knife. If it comes off easily then the layering is ready
Please note - there is no requirement of greasing the back of the tray/plate.
Now take a knife and make chess board pattern..6 inches long and 1 inch wide columns will be made. Now start rolling..

As the last step , heat some oil, add crushed curry leaves, white til and take the oil off the gas.
Garnish the khandvis with this mix and finally add chopped coriander leaves and dry coconut.
